The Hill House Bar: Sidra de Fuego


How to Prepare:

Ingredients:

  • 1.5oz 1800 Reposado Tequila
  • 0.5oz St. George Spiced Pear Liqueur
  • 0.5oz Lillet Blanc
  • 0.25oz Fire Cider (adjust to taste)
  • Juice of half a lime
  • Raw sugar
  • Smoked paprika
  • 1 slice of ripe pear
  • Ice cubes

Instructions:

  1. Begin by preparing the pear slice garnish. Sprinkle a thin layer of raw sugar on top of the pear slice. Use a kitchen torch to gently brulee the sugar on the pear until it caramelizes and forms a golden-brown crust. Set aside.
  2. On a small plate, mix together a small amount of raw sugar and a pinch of smoked paprika. Wet the rim of a rocks glass with a lime wedge, then gently press the wet rim into the sugar and paprika mixture to coat the rim. Set the glass aside.
  3. In a cocktail shaker, combine the 1800 Reposado Tequila, St. George Spiced Pear Liqueur, Lillet Blanc, Fire Cider, and fresh lime juice.
  4. Fill the shaker with ice cubes and shake vigorously for about 15-20 seconds, allowing the ingredients to chill and blend.
  5. Fill the prepared rocks glass with ice cubes.
  6. Strain the cocktail mixture from the shaker into the rocks glass over the ice.
  7. Place the bruleed pear slice on the rim of the glass for a visually appealing garnish.
  8. Optionally, you can sprinkle a tiny pinch of smoked paprika on top of the cocktail for an extra touch of smokiness and color.
  9. Serve immediately and enjoy your Spiced Pear Tequila Fizz!
