The Hill House Bar: Steakhouse Margarita


How to Prepare:

Ingredients:

  • 1oz 1800 Silver Tequila
  • 1oz Herradura Añejo Tequila
  • 0.5oz Salerno Blood Orange Liqueur
  • 0.5oz Demerara Syrup (Order Here) or (2 parts demerara sugar to 1 part water, heated until dissolved)
  • Lime Sea-Salt-Air foam (see instructions below)
  • Ice cubes
  • Orange twist, for garnish

Lime Sea-Salt-Air Foam:

  • 1/4 cup fresh lime juice
  • 1/4 cup water
  • 1/4 cup simple syrup (1:1 ratio of sugar and water)
  • Pinch of sea salt
  • 1 tsp soy lecithin (optional, for creating foam)

Instructions:

Lime Sea-Salt-Air Foam:

  1. In a bowl, combine the fresh lime juice, water, simple syrup, and a pinch of sea salt. If using, add the soy lecithin.
  2. Use an immersion blender or whisk to mix the ingredients until well combined and slightly frothy.
  3. Once mixed, create the foam by using a handheld milk frother or by blowing air into the mixture with a straw.
  4. Let the foam sit for a few minutes to stabilize while you prepare the cocktail.

Cocktail:

  1. In a mixing glass, combine the 1800 Silver Tequila, Herradura Añejo Tequila, Salerno Blood Orange Liqueur, and Demerara Syrup.
  2. Fill the mixing glass with ice cubes and stir well until the mixture is chilled and well-mixed.
  3. Strain the cocktail into a chilled rocks glass.
  4. Gently spoon the Lime Sea-Salt-Air foam on top of the cocktail, creating a frothy layer.
  5. Express the oils from an orange twist over the cocktail by holding it over the glass and giving it a gentle twist to release the aromas. Drop the twist into the glass as a garnish.
  6. Serve the Steakhouse Margarita immediately and savor the blend of tequilas, blood orange, and zesty lime foam.
